It is starting to be blueberry season and I can't wait to go picking. Last weekend I picked raspberries and they were delicious, though blueberries are still my absolute favorite.
I took the picture below when we went blueberry picking last summer. I think we picked something like 30 pounds of blueberries. And in case you're wondering if I made jam, pies, muffins, etc., etc.... nope! Just ate them all plain (or on cereal)... and of course Mark helped. :)
For dinners this week we are still trying to avoid using the oven. Are you excited to try that Saag Paneer I posted about earlier this week? It is so good! I can't wait to have it again. Also on the menu are the Pearled Barley Salad with Cherries and Arugula (great to eat when it's hot because you can eat it cold or at room temperature), Sweet Potato and Black Bean Quesadillas and Veggie Burgers. Enjoy!
Sunday: Saag Paneer (make the paneer earlier in the afternoon if you have time!)
- Make the full recipe and eat half tonight, have leftovers on Wednesday.
Monday: Pearled Barley Salad with Cherries and Arugula (*or try it with dried cranberries instead of dried cherries-- they are less expensive!*)
- Make the full recipe and eat half tonight, have leftovers on Thursday.
- Make the full recipe and eat half tonight, have leftovers on Friday.
Wednesday: Leftover Saag Paneer
Thursday: Leftover Pearled Barley Salad
Friday: Leftover Sweet Potato and Black Bean Quesadillas
Saturday: Veggie Burgers (or Chipotle Sweet Potato Burgers or Spicy Chickpea Veggie Burgers-- check your freezer first!)
- Make the full recipe and save leftovers in the freezer for future dinners!
