I've actually had another crazy busy week, so I haven't had my normal amount of time to look at food blogs or cook. BUT, when Mark got home today I did have some hot chocolate ready for us and we got to relax and chat and sip our hot chocolate and it was amazing. So if you are in the mood for a warm beverage as the temperatures continue to drop, I strongly recommend it! It's super easy to make and not overly sweet.
For dinners we've got Santa Fe chowder (one of my favorite soups ever... sourdough bread or cornbread are excellent with it), eggs in spicy tomato sauce (Shakshuka!), Indian style tofu and bean sprouts (the newest recipe to the blog!), and panko-crusted salmon. Lots of delicious food to look forward to!
Dinners for the Week
Sunday: Santa Fe Chowder with cornbread or sourdough bread if desired.
- Make the full recipe and eat half tonight, have leftovers on Wednesday. Any additional leftovers you can heat up for lunch!
Monday: Indian Style Tofu and Bean Sprouts with salad or roasted vegetables on the side and brown rice if desired.
- Make the full recipe and eat half tonight, have leftovers on Thursday.
Tuesday: Shakshuka with bread on the side.
- Make the full recipe and eat half tonight, have leftovers on Friday.
Thursday: Leftover Indian Style Tofu and Bean Sprouts
Friday: Leftover Shakshuka
Saturday: Panko Crusted Salmon with salad on the side.
- Make the full recipe and leftovers for lunch on Sunday. OR, make only half the recipe.
