This week I tried this recipe for sun-dried tomato, mushroom, and spinach quiche. It is made with tofu instead of eggs, and this was the first time I had tried a quiche recipe like that. I really liked the oat and almond crust! The quiche itself didn't really taste like a quiche to me. It was okay, but not something I was excited about making again. I'm not going to be posting my version on the blog because Mark was really not a fan of it, but I still thought it was worth mentioning. If you think you might like it, give it a try!
For dinners we've got the new pizza burger recipe I posted this week (they're fun!), saag paneer, and one of Mark's favorites- chili with cornbread! Enjoy :)

Tuesday: Saag Paneer
- Make the full recipe and eat half tonight, have leftovers on Saturday.
Thursday: Leftover Quick Mixed Bean Chili
Friday: Leftover Quick Mixed Bean Chili
Saturday: Leftover Saag Paneer
