- Savory Pumpkin and Cheese Stuffed Shells--- I like the idea of pumpkin with pasta. I bet you could modify this to make raviolis too!
- Roasted Pecan and Acorn Squash Soup--- This just sounds fancy (and the pictures are so pretty!). I think this would make a great lunch with a salad.
- Healthy Pumpkin Chocolate Chip Oat Bars--- These are vegan and gluten free, but look delicious. I can't wait to try them once I get my hands on some pumpkin.
- Greens and Grain Pizza--- From the King Arthur Flour blog... this doesn't have to do with pumpkin or squash, but I thought it was a neat idea. Cook a pizza crust with a ranch type sauce and then top with all your favorite salad ingredients (cold). It's like salad on a pizza!

- Make the full recipe and eat half tonight, have leftovers on Wednesday.
Monday: Chipotle Sweet Potato Burgers with Roasted Garlic Sauce and salad on the side.
- Make the full recipe and eat half tonight, have leftovers on Thursday.
Tuesday: Lemon Garlic Salmon with roasted vegetables or salad on the side.
- Make the full recipe and eat half tonight, have leftovers on Friday.
Thursday: Leftover Chipotle Sweet Potato Burgers
Friday: Leftover Lemon Garlic Salmon
Saturday: Thai Chicken Pizza with salad on the side.
- Make the full recipe and leftovers for lunch on Sunday.
