Menu for January 13, 2013 through January 19, 2013

This week is completely vegetarian.  Three of the meals you will have two times each-- a comforting pasta and vegetable dish with a savory yogurt sauce, a veggie filled spicy chowder with bread, and spring rolls with  perhaps the most amazing peanut sauce you've ever had.  You will also make veggie burgers to have once, keeping the remainder in the freezer for quick meals in the future (expect them in upcoming menus!).  By the way, these veggie burgers are one of Mark's favorite dinners ever (probably not as good as a steak, but close!)

Each of these dinners takes about an hour to prepare.  Look at your schedule at the beginning of the week and decide which days you will be most free to cook.  Feel free to reorder the days of my menu below to make it work for you so that you are having leftovers on your busiest days.

Dinners for the Week

Sunday:  Veggie Burgers served your favorite way.  On a bun with sweet potato fries and kale chips as shown below is great.  On a salad or roasted vegetables is also delicious.
  • Make the full recipe and store the 10 unused burgers in the freezer for future use











Monday: Roasted Vegetable Orzo
  • Make the full recipe and eat half tonight, have leftovers on Thursday











Tuesday: Santa Fe Chowder with bread on the side.
  • Make the full recipe and eat half tonight, have leftovers on Friday











Wednesday: Vegetable Spring Rolls with Peanut Sauce

  • Make the full recipe and eat half tonight, have leftovers on Saturday










Thursday: Leftover Roasted Vegetable Orzo

Friday:  Leftover Santa Fe Chowder

Saturday: Leftover Spring Rolls
