Last week we had some crazy weather. Snow and freezing rain one day and fog, thunderstorms and 60 degrees two days later?? Definitely weird. But it looks like next week will be back to normal colder temperatures, so this menu is full of warmth and comfort. We've got.... Cauliflower Cheese Soup, which was one of my favorite dinners growing up, and is still a favorite for both Mark and me. Polenta, which is like a dinner version of cream of wheat... it's so soft! Is it weird to describe food as soft? There's also spaghetti squash stuffed with meatballs and a spicy sauce and a Greek inspired pizza that I recently came up with. Lots of vegetables and a variety of flavors to keep it interesting! These recipes make a lot of food this week, so you might even have extra leftovers for lunch as well.
The most time consuming recipe is spaghetti squash, only because it takes awhile to cook the squash. Keep that in mind as you decide how this menu will work for you!
And for dessert.... last weekend I made these Healthier Brownies and we enjoyed them for a few days. I originally thought they tasted better warm, but I've changed my mind. They are also really good cold! Make them ASAP and enjoy!

Sunday: Cauliflower Cheese Soup with salad and bread
- Make the half of recipe and eat half tonight, have the leftovers on Wednesday
Monday: Creamy Polenta with Kale, Mushrooms, and Tomatoes
- Make the full recipe and eat half tonight, have leftovers on Thursday
Tuesday: Spaghetti Squash and Spicy Meatballs
- Make the full recipe and eat half tonight, have leftovers on Friday. Or, you could have the meatballs and sauce with spaghetti squash one night and with regular spaghetti on Friday.
Wednesday: Leftover Cauliflower Cheese Soup
Thursday: Leftover Creamy Polenta with Kale, Mushrooms, and Tomatoes
Friday: Spaghetti Squash and Spicy Meatballs
Saturday: Greek Inspired Pizza
