Then on Tuesday it was my birthday! Hard to believe I am 28! On my birthday I worked on a new cookie recipe. Still not quite ready to share yet... hopefully one more trial!
Want a picture of Mark too? He has been working a bit on prepping a garden this week. Later after I took this picture he built a little stone wall that is awesome.
So, what's the plan for dinners? If there is a theme it's avocado and eggs, as 5 of the dinners are great with avocado and 3 are great with eggs! Of course, if you don't like avocado as much as me, feel free to not have it (Mark doesn't!). On the menu for you this week is two new recipes that are some of our favorites (admittedly, I feel like I can say that about a lot of meals!). Vegetarian Fajita Burrito Bowls with homemade chips if you're up for it and also Chile Sweet Potato Hash is a yummy breakfast for dinner meal. From the past on the blog are Spicy BBQ Chickpea Burgers and Coconut Thai Chicken and Vegetables. Hope you enjoy!
Dinners for the Week
Sunday: Spicy Chickpea Veggie Burgers with toppings of choice and salad on the side. Make your own burger buns if you want!
- If you just want them for this week, make half the recipe (4 burgers) and eat half tonight, have leftovers on Wednesday. Or, make the full recipe and freeze remaining burgers for a later week.
Monday: Coconut Thai Chicken and Vegetables with Naan or rice.

Tuesday: Vegetarian Fajita Burrito Bowls with Baked Tortilla Chips
- Make the full recipe and eat half tonight, have leftovers on Friday.
Thursday: Leftover Coconut Thai Chicken and Vegetables
Friday: Leftover Vegetarian Fajita Burrito Bowls with Baked Tortilla Chips
Saturday: Chile Sweet Potato Hash with Eggs and Avocado
- Have any leftovers for lunch on Sunday.
