I also tried a new healthy-ish dessert recipe. These brownie bites are similar to the Healthier Brownies I've made in the past, but they are baked in a muffin tin to make individual brownie bites. If you are looking for a new quick healthy-ish dessert, give them a try! They are vegan and gluten-free. I used regular granulated sugar and added some chocolate and peanut butter chips.
Ready for some dinner plans? Sunday is Mother's Day, but if you don't have any prior plans I recommend Quinoa Burgers with Baked Sweet Potato Fries, two of my favorite foods ever! Also on the menu this week is a Chopped Thai Chicken Salad which is absolutely delicious (Mark was SO excited for the leftovers), Sweet Potato and Black Bean Quesadillas (a surprisingly big hit the first time around!) and Sesame Crusted Salmon with Teriyaki Glaze (gotta get those Omega-3's!). - Make the full recipe and eat half tonight, have leftovers on Thursday.
Tuesday: Sweet Potato and Black Bean Quesadillas
- Make the full recipe and eat half tonight, have leftovers on Friday. *Note- The recipe makes a lot, so make less than the full recipe if desired.*
Thursday: Leftover Chopped Thai Chicken Salad
Friday: Leftover Sweet Potato and Black Bean Quesadillas
Saturday: Sesame Crusted Salmon with Teriyaki Glaze with vegetable/grain of choice on the side.
- Make half the recipe, or the full recipe and have leftovers for lunch.
