Menu for May 26, 2013 through June 1, 2013

Are you excited about the long weekend?  I am, except that it looks like it will be cold and rainy for most of it...  I guess that will make for a good excuse to watch the new fourth season of arrested development on netflix and turn on the oven :).  Speaking of which...
  1. These cookies look amazing.  
  2. Sourdough bread twists-- also look great especially with all those seeds on top. I'm curious about the texture of these.  And I really need to get some pumpernickel flour apparently.
  3. If you like making bread, one of my favorite bread blogs is this one, which has "yeast spotting" every couple of weeks.  That's how I found those sourdough bread twists.  It's a fun way to find new bread recipes or ideas.
Unfortunately it would not be healthy to just eat cookies and bread though.  Dinners will be the Japanese Vegetable Pancakes that I made for the first time last week, Coconut Oat Crispy Chicken Salad, Gnocchi with Pesto and Roasted Vegetables, and Tempeh Hash with Mushrooms and Kale.  As per usual, lots of vegetables with a mix of proteins throughout the week!

Dinners for the Week

Sunday:  Gnocchi with Pesto served over roasted vegetables of choice.
  •  Make the full recipe and eat half tonight, have the leftovers on Tuesday.

Monday: Japanese Vegetable Pancakes with a small piece of salmon on the side if desired.
  • Make the full recipe and eat half tonight, have leftovers on Wednesday.











Tuesday: Leftover Gnocchi with Pesto + roasted vegetables

Wednesday: Leftover Japanese Vegetable Pancakes

Thursday: Coconut Oat Crispy Chicken Salad
  • Make the full recipe and eat half tonight, have leftovers on Saturday.  


Friday: Tempeh Hash with Mushrooms and Kale
  • Have any leftovers for lunch on Saturday.  


Saturday: Leftover Coconut Oat Crispy Chicken Salad
