Mark has one more week of his semester. It feels like time is absolutely flying by! I really can't believe that it is May.
Dinners for next week! Sunday is Cinco de Mayo, so I figured we should start out with a Mexican theme. Tempeh Tacos, which are surprisingly good, will hopefully satisfy any Mexican cravings! Then Greek Salad with Falafel, a new recipe from this week on the blog. Don't skip the salad-- it's simple but so good! Then Roasted Vegetable Orzo and leftover veggie burgers (or you could make Chipotle Sweet Potato Burgers). No meat this week, but lots of different flavors to look forward to!

Saturday: Have any veggie burgers from the freezer with sides of choice. No burgers in the freezer? Try these Chipotle Sweet Potato Burgers with Roasted Garlic Sauce
- Have any leftovers for lunch on Sunday.
