Menu for May 5, 2013 through May 11, 2013

Happy warm weather!  It has been GORGEOUS around here.  The picture below is the view from our front porch.  My office is on the front side of the house and  as it's been warm this week I keep taking breaks by walking out onto the front porch.  You can't really tell from this picture, but in the background where the grass ends is a river.  I love our view!


Also... my brother has had a huge week!  He started a new job on Wednesday and then turned 25 yesterday.  Happy Birthday David!   I'm so proud of him and I know he will have a great year!

Mark has one more week of his semester.  It feels like time is absolutely flying by!  I really can't believe that it is May.

Dinners for next week!  Sunday is Cinco de Mayo, so I figured we should start out with a Mexican theme.  Tempeh Tacos, which are surprisingly good, will hopefully satisfy any Mexican cravings!  Then Greek Salad with Falafel, a new recipe from this week on the blog.   Don't skip the salad-- it's simple but so good!  Then Roasted Vegetable Orzo and leftover veggie burgers (or you could make Chipotle Sweet Potato Burgers).  No meat this week, but lots of different flavors to look forward to!

Also... stay tuned for a cookie recipe tomorrow morning!

Saturday: Have any veggie burgers from the freezer with sides of choice.  No burgers in the freezer?  Try these Chipotle Sweet Potato Burgers with Roasted Garlic Sauce
  • Have any leftovers for lunch on Sunday.
