Menu for June 16, 2013 through June 22, 2013

Can you guess what this is?

A peanut butter cup pancake!!!  How amazing is that.  I made these for Mark within one day of seeing this recipe.  And let's be honest I also had one. The recipe is gluten free, but I used whole wheat flour because that's what I had.  We both really liked them, and found that they actually weren't that sweet or rich given their name and how they might look.   Take a look at the post on the minimalist baker to see how they look when they are done-- her pictures will make your mouth water!

Unrelated to food, we have been getting so much rain!  I usually don't think much about rain (compared to snow), but there has been so much water that it looks like a creek has developed on the side of our property.  This is a picture of the river near our house that at some points is super calm.  Crazy!


For dinners this week you have got to try the strawberry bacon pizza!  It is so different, but really yummy.  Also on the menu are spring rolls (we've been enjoying these lately for lunches too!), salmon, and chickpea pot pie with sweet potato biscuits.  Maybe pot pie doesn't make sense in the summer, but with all this rain I've been craving it!  And another clean out your fridge/freezer meal will round out the week and make sure you don't waste any food.  Enjoy!

Dinners for the Week

Sunday:  Strawberry Balsamic Bacon Pizza with salad/carrots on the side
  •  Make the full recipe and eat whatever you want tonight.  Have leftovers for lunch.


Monday: Vegetable Spring Rolls (try baking the tofu this time- just cut tofu into sticks,  brush with soy sauce, and bake for 40 minutes in a 400F oven- rotate tofu sticks every 10 minutes or so).
  • Make the full recipe and eat half tonight, have leftovers on Wednesday.











Tuesday: Chickpea Pot Pie with Sweet Potato Biscuits
  • Make the full recipe and eat half tonight, have leftovers on Thursday.  


Wednesday:  Leftover Spring Rolls

Thursday:  Leftover Chickpea Pot Pie

Friday: Asian Foil Salmon with Cauliflower Steaks
  • Make the full recipe have any leftovers on Saturday.  


Saturday: Clean out the fridge/freezer!  Look and see if you have any random leftovers or ingredients that haven't been used and throw something together.
