Menu for September 29, 2013 through October 5, 2013

Happy fall everyone!  I've been enjoying watching the leaves changing over the past couple of weeks.  Here is one of the trees in our front yard.

By contrast, here is the same tree last spring.  I love seasons!

This week I tried this recipe for sun-dried tomato, mushroom, and spinach quiche.  It is made with tofu instead of eggs, and this was the first time I had tried a quiche recipe like that.  I really liked the oat and almond crust!  The quiche itself didn't really taste like a quiche to me.  It was okay, but not something I was excited about making again.  I'm not going to be posting my version on the blog because Mark was really not a fan of it, but I still thought it was worth mentioning.  If you think you might like it, give it a try!

For dinners we've got the new pizza burger recipe I posted this week (they're fun!), saag paneer, and one of Mark's favorites- chili with cornbread! Enjoy :)

Dinners for the Week

Sunday: Pizza Topped Quinoa + Bean Burgers with vegetables of choice on the side
  • Make the full recipe and eat half tonight, have leftovers on Wednesday.  

Monday:  Quick Mixed Bean Chili with Cornbread
  • Make the full recipe and eat some tonight, have leftovers on Thursday and Friday.

Tuesday:  Saag Paneer
  • Make the full recipe and eat half tonight, have leftovers on Saturday.

Wednesday:  Leftover Pizza Topped Quinoa + Bean Burgers

Thursday:  Leftover Quick Mixed Bean Chili

Friday:  Leftover Quick Mixed Bean Chili

Saturday: Leftover Saag Paneer
